surely 1 graphics card dont need that much?

if you get a higher power PSU than you need it becomes less efficient at your requirement level. ie: hundreds of watts more than you need.

yah but I might be looking to put another graphics card in sometime in the future, which means I would probably need another Motherboard to the one posted as I'm pretty sure that one ain't SLI.

ok u need a big psu for the 480 even the 5970 it is 2 six pin id go with at least a 800 mabey 1000 to be safe and the case i love lol make sure your motherbored has more then 1 pcie slot it suck to have only one like mine i no. the v 8 u might want to get the scorshair h50 its a all in one watercooling kit no leaks and it is around £50 and probly works beater. with win 7 im not sure how much more it is but the pro and unlimited are about the same so id go get the pro one insted of home =]
